Cabbage Slaw with Cilantro


  • 1 head cabbage, chopped
  • 4 medium carrots, grated
  • 1 cup coarsely chopped fresh cilantro
  • 6 green onions, finely chopped
  • 3 tablespoons canola oil
  • 3 tablespoons fresh lime juice
  • 1 Tablespoon honey
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 tsp cumin
  • Pinch of cayenne (optional)

Combine chopped cabbage, carrots, cilantro and green onions in a large bowl. Whisk canola oil, lime juice, honey, salt, pepper, cumin and cayenne in a medium bowl until well blended. Add to cabbage mixture; toss to coat.
